PLAIN BIRIYANI
KUSKA
Ingredients:
Basmati rice - 1 cup
Curd - 2 tbl spoon
Salt as needed
Biriyani powder - 1/2 t spoon
Chilly Powder - 2 t spoon
Garam Masala - 1/2 t spoon
Turmeric - 1/4 t spoon
Mint leaves - 1/2 cup
Sliced onion - 1 1/2
Sliced tomato - 1 1/2
Patti, cloves, biriyani leaves, cardamom - Each 1
Oil 1 tbl spoon
Ghee - 2 t spoon
To Grind:
Garlic - 8
Ginger - 1 inch piece
Green chilly - 1
Coriander - 1/2 cup
Mint leaves- 1/2 cup
Wash and Soak 1 cup Basmati rice In water for 1/2 hour.
First grind the garlic, ginger, green chilly, coriander and mint to a fine paste.
Add oil and ghee in a pressure pan.
Then add the Pattai, cloves, cardamom and biriyani leaf and fry for a minute.
Add the sliced onion and fry till slightly browned.
Then add the tomatoes and fry for 2 minutes.
Then add the grounded paste, masala powders and salt and let it cook for 5 minutes.
Then add the curd and mint leaves and mix well.
Now drain the soaked rice from water and mix it well with the prepared biriyani masalas.
Add 1 1/2 cups of water and give a mix.
Check for salt, spice and cover the lid with the whistle on.
Cook the biriyani for 4 whistles in medium heat and wait for 15 minutes .
After the pressure is released open the cooker.
Garnish with fried bread pieces.
Serve with onion raita and chips.
