HOW TO SEASON INDALIUM DOSA TAWA
Usually in new dosa tawa Iron or indalium, dosa will not come easily until we season the tawa.
Each time we wash the tawa or if it is kept unused for long time we have to season the tawa.
Otherwise the dosa will stick to the bottom and will not come out crispy.
Once we season, even without oil we can make crispy dosas.
Now we need only 2 items to season dosa tawa.
Vilakeenai / Castor oil
Big Onion - 1
Grind 1 big Onion to a paste.
Add 3 tbl spoons of castor oil and onion paste to the tawa.
Spread the oil and onion in all parts of the tawa and let this rest for 1 full day.
Next day the onion gets dried up.
Wash the tawa in water lightly without scrubbing hard. Wash with a a sponge only until the onion oil goes out.
Now heat the dosa tawa and pour 1/2 t spoon of oil and rub with a cut onion.
Now spread the dosa flour.
From the 2 nd dosa no need of sprinkling oil in the starting.
Just rub with the onion and pour the dosa flour.
Sprinkle ghee or oil on the top of the dosa.
We can now easily turn the dosas.
