CRISPY BITTER GOURD FRY / PAAVAKKAI PAKODA

BITTER  GOURD FRY

Ingredients:
Bitter gourd - 3 big
Curd - 1/4 cup
Salt as needed 
Gram Flour - 3 tbl spoon 
Rice Flour - 2 tbl spoon 
Corn Flour - 1 tbl spoon 
Turmeric Powder - 1/4 t spoon 
Chilly Powder - 2 t spoon 
Coriander Powder - 1 t spoon 
Coriander Leaves - 2 tbl spoon chopped 
Curry Leaves - 1 spring 
Lemon - 1
Garlic - 10 crushed 


      Cut bitter gourd into thin slices.
      Soak the bitter gourd in curd, water, salt for 1/2 an hour.  

 
      Squeeze off excess water and remove the bitter gourd. This reduces bitterness in the bitter gourd.
      Wash once and add turmeric powder, salt, chilli powder, coriander powder, chopped curry leaves, coriander leaves, lemon, crushed garlic, gram flour, rice flour, corn flour.


      Sprinkle little water and mix well.


      Deep fry the marinated bitter gourd in medium high flame.


      Once golden, remove the fries from oil and transfer to a tissue paper so that excess oil gets absorbed.

      Enjoy crispy bitter gourd fry with rice and rasam.
