CARROT STIR FRY

CARROT  PORIAL

Ingredients:
Carrot - 5
Oil - 1 tbl spoon 
Mustard Seeds- 1/2 t spoon 
Cumin Seeds - 1/2 t spoon 
Urad Dal - 1/2 t spoon 
Red Chilly - 1
Curry Leaves - 1 spring 
Salt as needed 
Turmeric Powder - 1/4 t spoon 
Coriander Seeds - 1 t spoon 
Garlic - 10
Chilly Powder - 3/4 t spoon 
Coconut - 2 tbl spoon 


      Cut carrot into small pieces.
      Heat oil in a pan and allow mustard seeds to splutter.
      Add urad dal, red chilly, curry leaves, carrot and sauté well.


      Add salt, turmeric powder and mix well.
      Cook covered in low flame for 10 minutes.
      Grind together coriander seeds, cumin, red chilly powder, garlic, coconut coursely and add to the carrot.


      Sauté for 5 minutes in slow flame and carrot stir fry is ready to enjoy.
