MIXED VEGETABLE KURUMA

MIXED VEG KURUMA

Ingredients:
Oil - 1 t spoon 
Fennel Seeds - 1/2 t spoon 
Onion - 1
Carrot - 1
Beans - 10
Peas - 1/4 cup
Cauliflower - 1/4 cup
Red Chilly Powder - 1 t spoon 
Coriander Powder - 1 t spoon 
Turmeric Powder - 1/4 t spoon 
Garam Masala - 1/2 t spoon 
Salt as needed 
Coconut Milk - 1/4 cup
To Grind 
Tomato - 1
Ginger - 1 inch piece 
Garlic - 8
Mint Leaves - 15


      Grind together tomato, garlic, ginger, mint with water to a fine paste.


      Heat oil in a pan and add fennel seeds.
      Add chopped onion and fry until golden.
      Add the ground paste, salt, chilli powder, coriander powder, turmeric powder, garam masala and cook for 5 minutes.


      Add the chopped vegetables, 1/4 cup water, cover with a lid and cook the the vegetables until soft.


      Add coconut milk and simmer for 5 minutes.


      Enjoy mixed vegetable kuruma with chappathi.
